When October comes around, you know you’ll start to crave pumpkin-flavoured everything all over again.
Combined with some flavourful corn, you’ve got one hearty, tasty meal. It also makes for a good recipe when you’re in the middle of autumn and trying to stave off any feelings of winter.
Instructions:
Mix together the chicken broth, corn, and onion in a saucepan. Cook until it boils and then reduce the heat to low. Simmer for 20-25 minutes or until the onion is tender. Add the pumpkin and stir until blended thoroughly. Cover and simmer between 5 and 10 minutes.
Pour in the half-and half, and add the salt and pepper as well. Cook, and continually stir until completed heat. Make sure the soup does not boil again though!
